BIOGRAPHY
Michel Lambert is a historian, author and retired teacher. He is
recognized for his popularization work on the origins of our
cuisine, its influences and its evolution.
Elisabeth Cardin is author and co-owner of the Montreal restaurant Manitoba whose mission is to develop strong links between our territory, our seasons, our artisans, our know-how and our cuisines.
Both are interested in Quebec culinary identity and this work
is the fruit of a dialogue that began more than four years ago.
